Artificial selection is a way of selecting gene traits to reach a specific breeding goal. But genes can produce only what they contain, and nothing more - for example, in 1800 the sugar content of the sugar beet was 6%. After many years of selective breeding the absolute limit of 17% was reached. It has not and never can change beyond this.
